we always blanched them so we could slip the peel off cut in half to take seed out to freeze. I use a turkey fryer pot and burner to boil water in to blanche , cool them in a tub of water with a garden hose running in it . the flavor of those warm peaches right after you peel them is outstanding. You only boil them long enough that the peels slip off about 2 min or less if the water is rolling.
