southern MN | Generally this is handled by the email provider, on their server. Your iPad is just accessing whatever folders are on the server.
So, where is your email being handled? Gmail, Yahoo, Hotmail/Libe, your local telephone or cable company?
You might have to visit your email providers web site and set things up somewhere to 'filter' emails better.
It is possible to download an app that will handle your emails, and do the filtering on your iPad. I haven't done this so can't suggest any.
