I have never met anyone who regretted building a barn or shop too big or too nice. Most people (myself included) build one and then a few years later wish it would have been larger or better. I would think long and hard about possible future needs and not just build it for what you need today.

Quonsets are ok but the only way to extend them is lengthwise which is the only way into them so they are hard to usefully expand.

If I built another one it would be a steel building that had the doors on the side wall. It is relatively easy to make a steel building longer, but not wider. I would make it as wide as I could afford and position such so that when future needs arose I could easily add to the length of it and add more doors. In your case maybe make it 60' wide and 40' deep with the doors on the 40' side walls so that when the time comes you can extend it and make it a 60x60 or 60x80.
