Optimal spacing sort of depends on the variety. Some small squash you can plant really thick, while really big pumpkins would prefer six feet in any direction.
I prefer 2 to 3 feet between plants in row and we sort of do a "twin row" type arrangement where we put a pair of rows about 4 feet apart and then 12 feet to the next row. That gives fair access for harvesting.
