If you've got some extra steel laying around, making a stand about 18" tall really makes it a lot easier to skin/gut it. Not sure the forklift would have the reach to lay it down on the stand though, might have to use one of the loaders.
We used to butcher 3-4 head/yr with my parents friends. Been several years since we've done one.
