Mike your post is about the same as on the UW alfalfa guide. Cut 3 times a year for persistence.  Your dates are almost exactly when I have mowed this year.  I will graze it after it is really froze off as you describe.

What has also worked well this year is the red clover. It has really come back well after grazing.
