Faunsdale, AL | You're correct, cut when convenient. You may need to hurry to keep enough moisture if it was a killing frost and you have good drying weather since.
I chopped some grain sorghum starting the next day after a hard frost and it was perfect for our concrete stave solos. Next time the crop was a BMR brachytic forage sorghum planted on 7.5" spacing instead of 30" rows and it took several frosts over several weeks to get it down to 70-75% moisture to bag without making mush!
