Fairy rings seems to be the best answer, however, there hasn't been trees in those areas for probably 100 years so I'm not sure how the fungus started. The ideas of rodents doesn't make much sense to me, no other signs and can't figure out how or why they could cause the grass to be greener in a perfect circle.
