Skip the sunflower, it contains zero Omega-3 fatty acids and the second most Omega-6 content of all other seeds except for safflower, and egg yolks have plenty of those already. Try to find flaxseed for your mix instead, it has over 3 times more Omega-3s than 6s. That's what egg producers do to sell their eggs at a higher price because the Omega 3/6 ratio is healthier for cholesterol. With that threat gone, all the arguments "eggs are bad for you" are gone too. Flaxseed also has twice more monounsaturated fat than saturated, which is good too.
Note that if your backyard has plenty of grass and insects or worms, your hens probably don't need the extra Omega-3s, they get it already.

Edit: We'll probably learn in a few years that Omega-6s were not so bad after all, but I'm giving you the latest science, LOL!
