What are you planning to feed it to?

Beef cows, let it get mature, headed out, in the dough stage for lots of tonnage, still plenty digestable.

Dairy cows, consider mowing and wilting at boot stage or before for higher protein and digestability. Or you can chop as for beef cows above and you won't need as much other fiber source in the diet.
