Never even heard of it, now I'll have to try!
The most popular recipes seem to have bread or potato hash brown, sausage meat, red bell pepper, onion, scallion and cheese. Looks like one dish would keep you full from Easter to Christmas!

Frozen potato hash brown are usually full of fat, I'll try replacing them with freshly grated potatoes instead. I even saw one recipe that used quinoa, it's not really ma favorite grain, but it made me think that cooked pearl millet would make a great carb for an egg bake, it really goes well with eggs. And it's possibly the new crop of choice for the Midwest after global warming hits, discover it now!  ;)
