Southeastern Tipton County, Indiana | Chimel - 3/23/2014 22:11 Bierkäse and real old cheddar would be great if I could find them in the store, but the only cheese there with some flavor are the American-made Ile de France camembert, which compares to the best French ones when mature, and Safeway's Primo Taglio store brand of Brie (not sure if it was double or triple cream,) which actually contains the same culture as Bierkäse, but I couldn't find it lately.
As for French cheese, my favorite is Époisses, which is brushed with wine brandy for one month during maturing. This cheese is also using the same cheese culture as Bierkäse and Limburger, which by the way is the same bacteria that grows spontaneously under our armpits and between our toes. Now you know why they call this family "stinky cheese." So, there really is "Fromunda" cheese? |
