Well there is a bit of truth in that, they say that starling eaters who try thrush never go back to starlings!
There is also this French saying, "when thrushes are few, eat blackbirds", which seems to put starlings at a lower culinary scale, since it's not even mentioned as a possible replacement...

As for vermin, many recipes for rabbit indeed, from the top of my head: Mustard; red wine; prunes; carrots; "chasseur" ("hunter", shallots and mushrooms and white wine sauce.) These are 5 different recipes, not one recipe with 5 ingredients! ;)

Small birds were traditional in rural Provence: Bunting, thrush, blackbird, robin. Much less now, some are illegal to hunt.
Preparation is limited to removing the feathers and the legs. The entrails are left to melt and drip on toast.

Here are a few pictures to show the rotisserie (broche, brochette) and the tray used to collect the melted fat.
The fat is then regularly poured back on the birds.
Some people even add a skewer of fat above the birds so it keeps dripping while the birds roast.
Mid-roast, toasted baguette is placed on the tray to absorb the drippings.
After the full roast (a good 2 hours), the birds are removed from the skewers and served whole on the toasts.
