| I don't find them great however you cook them.
Use fresh beans, soak them overnight and rinse if they are dry indeed.
They are better cooked in a pressure cooker rather than just boiled, so the heat and water can penetrate deep inside, but boiled works too.
They could still be tough, depending on the food grade and dryness of the beans.
You have to try to see if your variety becomes tender after cooking.
For recipes, just remember that soybeans are very fatty compared to normal beans, so don't use much oil.
Once cooked and dried a bit, you can roast some in a frying pan with some oil, a bit like peanuts, great for appetizer.
