Seed will be hard and crunch when you bite it. If you can still find soft grains and even gren colored ones it will still be too high moisture. Some of the little clumps/clusters of grain will also "droop" when they finally dry out.

Generally I look at the bottoms of the heads, pick a few berries, and crunch them in my teeth. If you can't find any soft ones you are there.

Moist baby wipes help too with the itch. Run them around your neck and over your face once in a while and it helps a lot.
