Because of the tillage to level ridges, and hill them up again when the crop gets big enough. I only have Gravity irrigation on parts of 3 pivot corners which makes it hard to justify equipment for ridge till which would be the way to go. That or just forget the gravity pipe and no-till it all.
pictures were taken around 6 pm IIRC when sun was as high as you see in the picture.
