They will eat on anything. Often a forage type rice can be planted when establishing a pond, otherwise the rice stubble and sometimes milo stalks are left.
Keep in mind crawfish is a crop. They are seeded, not overfished, left unfished to let grow, water managed for them to overwinter, etc.
