Don't ever freeze cheddar, it will become flaky and crumble loose.

Cold storage is how cheese is aged, but I don't know why you vacuum sealed it if you just made it. It's not cheddar until it has aged for weeks or months.

Since you just made your cheddar, google "aligot recipe", it would work just as well with young cheddar as with young cantal. Even though it's to die for, please don't!  ;)
