Isn't seed cost more of a concern for GMO seeds?
Inferior yield is probably a bigger concern, that's why IP or food grade varieties have a premium in the first place. An even bigger concern is to start planting such a crop without having worked out contracts in advance. Might work to your advantage, but also increases your risk.
