Tankless hot water heater

Subject: Tankless hot water heater


My son Ryan needs to maintain 180 degree hot water in the winery for sanitation purposes.

He has a tank heater that can do it if turned way up. But then it is dangerous for hand washing for the public in the bathroom.

Would having a tankless hot water heater just for his dish washer and for sanitizing the wine equipment work and keep the tank heater for the hand wash job.

If so would you use gas or electric, both are available.

Keeping the tank heater set at the max to get 180 degree water several times a week seems to be wasteful, but would the cost be prohibitive to run two units.
