you can´t tell much from the color of the leaves, they´ll really suffer from thawing and freezing again, but with no harm to the growing point.
Evaluate your stand some days after vegetation really started, cut some plants to see what the growing point does.
We had an unusally cold february 2012 without snow that completely took away some winter wheat varieties while some winter barley survived. It all depended on the stage the crop was in and how it was exposed to the cold eastern winds we had. But you could not tell a difference before 10 days of vegetation.
On some soil types barley really appreciates foliar fed manganese in fall for winter hardiness.
