The "smoke" you see is water vapor. The NH3 vaporizing (boiling) quickly cools the air around it and causes the moisture to condense. Just like contrails behind a jet.

I can't remember the specifics but I read once it only takes one drop of NH3 liquid to cool enough air to form several cubic feet of "smoke".
