When I lived in a split-level house, I went the two twinXL route to get the mattresses upstairs. It worked out fine, but both of the mattresses were identical. The fitted sheet helps keep them together, and as long as the mattresses are not on a slick surface where they could easily slide apart (mine were on a platform bed), you will be ok. I would want the mattresses to be the same height/thickness. While I do not have one, you can get a filler for the middle. Search for something like a "twin to king foam filler."
