Drivers tend to run on the high part of the straightaway and then dive down through the turns. If a track were built that followed their chosen line would they run consistently around the track or would they do the same thing and square off the turns even more?
The short answer is that running like that makes the turn wider (able to be driven faster) than running up high or down low consistently. So if you made the track follow that path, they would run even higher and lower until you got the track to be a continuous circle instead of an oval.
There are exceptions to this, Darlington comes to mind.
