Debra--have you ever dehydrated zucchini? I tried for the first time a couple weeks ago. I sliced thinnish and coated the veggies with garlic powder, oregano, basil, and salt. I stored in old, big 2-quart canning jars. They turned out great! A healthy snack for the months ahead!
