What I do, may be a better way, is smoke for 3 hrs. at 200 and then wrap with foil and cook at 250 till internal reaches about 160. Then cook for 1 more hour unwrapped. Save juces in foil and put back in pan with meat after cooking. Will taste pretty much like a brisket. A good meat thermometer with a cable will be your best friend.
