| We don't like it frozen nearly as well as fresh, as it gets soft when frozen. My freezer book instructions are to wash and cut tender parts of the stalk into lengths to fit containers or 1-inch pieces. Water scald small stalks 3 minutes or larger stalks 4 minutes or steam scald small stalks 4 minutes or larger stalks 5 minutes. Cool as quickly as possible in ice water, drain, and pack in containers. | |
