As long as you keep concrete wet it continues to gain strength. When it dries out, it stops gaining strength and re-wetting does not make it start gaining strength again.
Some years ago, I poured a small pad for a hopper bin. When the concrete set, I placed a lawn sprinkler in the middle of the pad and left it run for two weeks steady. The surface of the pad is very hard and glossy to this day.
