Are you cleaning the inside of the kettle, or the outside? Hubby's uncle makes apple butter every year, and he is very particular in how it is maintained. It gets scrubed down (interior) with warm cider vinegar, and salt for abrasion. The interior is polished with steel wool and this mixture. Once the apple butter is made, the kettle gets a liberal coating of Johnson paste wax which seals the surface and prevents discolouration. As for the exterior, you never worry about that, just wash off the spillage.
