That may be kind of a Ford vs Chevy question but most will agree that one of those two balers you mentioned is best for stalks.
Maintenance will make all the difference in how long the baler will last. I just sold a New Holland with over 10,000 corn stalk bales on it and it is 100% original other than a few pick up teeth. I ordered a new Deere 568 for this year, hope it runs as trouble free.
