Banana pie

Subject: Banana pie



West Chazy, New York

A nice dessert that's a little different.  Apple bananas work best, but Cavandish will work as well.

 

4 Cups sliced ripe bananas

1/2 Cup pineapple juice

1/2 Cup sugar

1 Teaspoon cinnamon

1 Tablespoon butter

Pastry for a two crust pie.

 

Soak the banana slices in pineapple juice for 30 minutes.  Drain off the juice, place bananas in the pie crust.  Add cinnamon and sugar, which have been mixed together.  Add two tablespoons of the juice, add the butter and cover with the top crust.  Bake at 400 for 35 minutes or until crust is brown.  Note: if you wish to leave the juice in the pie, add three tablespoons of flour to the filling.
