Yes you're right; it's the non-seafood equivalent of that.  That recipe comes from The Foods and Wines of Spain by Penelope Casas, with a few of my tweaks (mostly with the chicken).  My mom made this recipe many times for me when I was growing up, and I like to think I've gotten to be almost as good as she was at it.  We spent two summers studying in Spain and the dish brings back good memories of that time there with my mom.  I had lots of different types of paella while there, but my favorite meal was tempura-fried calamari and gazpacho.  YUMMY!!!

For an amazing paella in Chicago, head to the far western suburb of Naperville and go to Meson Sabika.  It'll set you back a couple dimes but it's worth it and the service is amazing!
