My wife would like to spend a couple days/nights on the Mississippi near twin cities. Were looking at Hastings, Stillwater, etc.  Willing to spend decent money on a NICE hotel with a good view. And want to be able to walk along the river- explore....Don't need to be in the water- just by it!

I would  highly recommend Nicolet Island Inn on Harrit island in Mpls - Its on the Mississippi, very near downtown Mpls - but in the old Milling district. Lots to see (history) and do.
Stillwater is 40 mins or so east on the St. Croix river . . . it's a touristy old town . . . but I perfered Harrit Island area.

After a couple days in Mpls/St Paul, if you could drive south along the Mississippi, on your way home. Stop in Hastings, Redwing and some of the other old river towns. They have some nice parks along the river. Then head west on 90 . . . .. 
Edit: If you have bikes - nice riding aruond the area ~ or roller blades
