The schrader valve you refer to is used to purge air from the hose after it is attached to the freon tank. It is common practice to vent a little out that valve to purge the air in the hose before chagring.
Newer and better gauges have a schrader in the hose end or a valve on the charge hose where it attaches to the tank.
