I think you can do better than $6.49 personally if you visit some meat guys. Feed guy dropped a couple of CAB New York Strip loins off for dad a couple weeks ago that were aged 40+ days and ran $5.30/lb. I think he actually bought them closer to $5.00 and then took a cut. The aging thing is done as a favor by the guy who runs the meat dept but these loins will be better than any Ribeye and without the gristle.
