The game cameras will sense motion day or night and take a picture or a group of pictures as programed. The flash is infrared so not to be noticed.
Look at this watering hole photo near the Texas/Mexico border taken with a common game camera. The border-hoppers couldn't have seen the flash or they would have swiped the camera.
