It does sound a little nuts, but a market is a market. However, do you really think there are a significant number of folks demanding this? Do they have money? Will the 'fear factor' persist or will they just head to target after paying off the loan for the organic tie dyed T shirt they bought for $75. There is a reason we don't all jump on these markets. They tend to be unstable. There was a pork kill and processing plant in Rantoul, IL then they thought antibiotic free pigs were the next big thing. They ran 1 or 2 days production non-antibiotic. The economy slumps off a little and suddenly the benefits of antibiotic free pork become worthless and lots of folks are out lots of money. Was there a real benefit - probably not, but there was a market for a time.

The niche market's can work if you either stay at a scale where market shifts don't kill you or have flexible production systems that allow you to move to more mainstream markets. Locking yourself into a niche market in a big way is probably riskier than going to vegas with the money.
