I have several of those 366 ci Chevy trucks that are the same way and one is worst. I run CaseIH No 1 oil 15W-40. At 10 to 20 degrees F, it flows about like frozen molasses. I blame it on the oil pump is on the rear main bearing and has to pump that thick oil from the back of the engine to the front of the block through a small lifter galley passage to where the oil pressure sensor screws into the front of the block. Oil flows faster when warmed up and/or summer temperatures. I got worried on this one truck and put a manual gauge on it and it did show a little more pressure quicker, but still slow. That was 8 years ago and still running. Probably should use lighter oil in winter, but I don't use these trucks in winter.
