I have our bar broke into 5 sections, (the picture shows the main 5 way manifold after the coolers, master, and flow valves) then they go out in equal length hoses to the section valve and directly into a manifold where the 3/8" hoses go out to the knifes. With the section control valves out as close to the last manifold as possable, there is less hose and hence less NH3 to bleed out once the valve shuts off makeing for quicker on/off time the down side is you have to have extention cables from the main harness to the farther out valves but its worth it. A 2 valve system is actually better for low flow rates than a single fast valve. We have 3 or 4 knifes per section and never had any trouble. I know of bars out there with individual knife shutoffs that work just fine.
