SW Ontario | Just a guess, but being from Missouri, I doubt you have much experience cutting frozen anything. Where we are, winter is more than just a season on a calendar and the crops have to come off, and sometimes when they are frozen it works quite well.
You are also wrong about the moisture staying in the seed, ask anybody that has left 30% corn out overwinter (cold) only to harvest it near dry in march or april. The ice slowly evaporates...really it does.
