NEMO | I grind up the deer meat, weigh it then add ground pork butt at a mixture of 40% deer, 60% pork, then grind it all over again together. For the seasoning I like to use L.E.M. products. You can but directly from them or I have found it at some Walmarts some local farm stores or Cabela's. You can get a variety pack or just get what ever flavor you want. I like hickory, mesquite and cajun. I only do the jerky, but my brother does sausage. If I can get his recipe, I will post it as well. I believe L.E.M. products probably has that as well.
