I have never had Ruby Tuesday's apple salad, but here in the south, we make it with a mayo based dressing. It needs to be real mayo and not salad dressing. I use about 3/4 cup mayo, 2-3 tablespoons of sugar, and about 1-2 teaspoons of lemon juice. Mix all together then pour over 3-4 large apples cut into chunks. I too add walnuts, sometimes a little chopped celery, dried cranberries, and mini marhmallows. I have also made a dressing with less lemon juice and a teaspoon or two of fresh cream. Let it sit in the frig about 2-3 hours before serving. However, it will get runny if left over 24 hrs. These measurements are not exact.. I cook like my grandmother, a pinch of this, a dash of that, or a smiggen! I would suggest that you play with the base and just taste test as you go.
