Tonight I cooked a t-bone on the kettle. This grill is over 40 years old and I like to use charcoal now and then. What a nice way to cook. You can't get this flavor with gas or wood chips or pellets.
You really want to up your game, get a bag of mesquite chips. Right after you drop the steaks on the grate, leave enough gap between them to sprinkle a couple dozen chips through the grate onto the coals. They will kind of flare up and quickly sear that first side. Give it about 2 minutes, and flip. Give them 5 minutes, flip back for another 3 and they will be perfect medium rare. | |
