Here is somone who has a few videos on how things can be done.  I use Ubiquiti equipment including mesh antennas, NVR, point to point (go over a mile) cameras up to 4K and other.  It is challenging to do on your own but they make good equipment.  There are numerous people on Youtube that have made many videos on how to do it.    I like this guy and his company/  https://www.youtube.com/@CrosstalkSolutions/videos
My mesh system is set up that I can be at my house or at the farmyard and my phone or tablet hook up easily.  The mesh antennas also are meshed so phone or tablet move around smoothly on wifi.
My local phone company does work with Ubiquiti equipment some but due to availability have used others.  There could be a local company that could help you out.  Equipment can get expensive but you don't have to be paying anyone a monthly fee for you camera system.   New cameras from them can read license plates and also recognize people - or at least tell you that it is a new face not set up yet in your database.  https://ui.com/us/en/camera-security
