Ice cream one has to really pick your poison. It can be made well with less cream by adding more eggs or sugar or possibly some corn syrup. Adding a small amount of guar gum will help with less cream as well as it will thicken the batch. Takes about an 1/8 tsp per quart batch. Next best thing is to get more air in the mix with a more agressive mixer. I use the frozen bowl mixer and its convenient but barely adequate.
