My MIL gave me this wonderful recipie for peaches. My kids love them.

10 cups sugar to 12 cups of water and heat until dissolved.
Heat a big pan of water to boiling. Put peaches in 1 - 2 minutes to blanche them, then put in cold water.
Fill jars with cut peaches and pour the sugar mixture on as soon as possible. The peaches will turn a little brown, but the sooner they are covered with liquid the less they brown.
Leave about 1" space at the top.

When I did this I had 11 quarts & 9 pints and still had spare juice left. So you'll have to judge for yourself how many jars to plan for. I've only canned them once. Unfortunately, my peach tree has no fruit on it this year. :(
