I use Revere Ware copper bottom pans. I have an 8' skillet. But for things I want to brown quickly, I use an ecolution skillet that I get for $7.99 at Bi-Mart. $10.99 for 9.5", $12.99 for 11" on sale. I did find out only use a silicone spatula. I have had high price (for us) non-stick but they seem to get scratches just as quick. Once it gets a couple scratches, I will not use them. I don't like "plastics". These last me 3-4 years. I do keep one for a replacement. I use cast iron skillets and Dutch ovens for outdoor cooking. We have always had an outdoor kitchen as we are off-grid here, but it has turned into a 4 season porch, with screens or storm windows. This last 2 years we have enough solar and a solar generator, to run a burner, so cook a lot more on that and an electric hot pot for hot water....James
