We just put one up and used spray foam insulation on the walls, (12+" of blown fiberglass in the ceiling). It was more expensive than fiberglass, but so far we are extremely happy with it. It hasn't been very hot around here, but on the hot days, it almost feels like there's an air conditioner on inside the shop. You open the door and stand outside it and there's a cold draft.

We didn't do anything for a vapor barrier. Talked to some neighbors about it that have put shops up within the last so many years. Most of them said it wasn't neccessary, but it may also depend on your weather and climate.
