The rabbits girdling an apple tree and it surviving is odd, usually the rabbits want the green layer and chew through it and it's dead above that point, it may leaf out but won't survive. Deer rubbing antlers aren't going for the specific layer, so even if it's green, it might survive. If you scrape it with your fingernail in the spring and there's green all the way up the rubbed area, then it should survive. Or you could cut it off during the winter and see if it sprouts back.
