I pan seared the piece you are looking at tonight

I am roasting a seven pound rib roast out of this for thanksgiving.

Make it like you make any steak.

I didn’t even put salt on the steak today and it was awesome. I wanted to know what it was like straight up.

It was tender and flavorful. It was slightly firmer which I would attribute to taking the more moisture out of the meat
